Why Our Lobster Tastes Different (Because It Is)

In Florida, we’re lucky to have some of the best spiny lobster in the world right off our coast but most locals rarely get to taste it.

That’s because the majority of Florida lobster is shipped overseas, where it fetches a higher price on the export market. Meanwhile, many Florida restaurants end up serving cheaper imported lobster tails from the Caribbean, often preserved in chemicals like sodium bisulfite to extend shelf life. The result? A rubbery texture, bland taste, and none of that sweet, clean flavor Florida lobster is known for.

At Palm Beach Lobsters & Seafood, we do things differently. We’re a father-and-son operation and commercial lobster divers ourselves harvesting spiny lobster right off the coast of Palm Beach and Jupiter. What we don’t catch, we source directly from other local divers we know and trust. No middlemen, no imports, no compromises.

Our lobster tails are always fresh, never chemically treated, and cooked the same day they come out of the ocean. That’s what makes the difference in every bite.
